Because SOOOO many people reached out to me on Insta-g and Snapchat after posting some pics of these delicious cookies, I figured I would share the recipe with you. After looking up a bunch of recipes for fall-y cookies, I stumbled upon one on Pinterest and put my own spin on things. These cookies are GLUTEN FREE, VEGAN, and PALEO!!
Let's talk about a score, cause we all know that dairy and gluten don't EVER do me justice.
ANYWAYS -- Start by turning on your oven to 350º and know now that my batch only made 15 cookies, so if you want more then you gotta double {or triple this recipe}.
In a big bowl add // mix together...
☆ 2 cups of almond flour
☆ 1/2 teaspoons of baking powder
☆ 1/4 teaspoons of salt
☆ pumpkin pie spice
In a smaller bowl add // mix together...
☆ 3 tablespoons of coconut oil {melted}
☆ 3 tablespoons of pumpkin puree {I like to use organic}
☆ 1/4 cup of maple syrup {I like to use natural // organic}
☆ vanilla extract
Pour the wet mixture into the dry mixture and mix together
Put the large bowl in the refrigerator for about 10 to 15 minutes. By placing the mix in the fridge, the dough will become a little more sticky for the next step.
In a small bowl mix...
☆ coconut // palm sugar
☆ cinnamon
Form balls the size of about your thumb and pointer finger {if you make the "perfect" hand shape} and then roll the dough in the cinnamon and sugar mix. Place the dough balls on the tray about two{ish} inches away from each other.
For a flatter cookie, I pressed on the dough balls with the back of a spoon. Place the cookies in the oven for about 10 to 12 minutes...
AND VOILA!!
Honestly, these cookies ALMOST lasted me a week!! They are so freakin chewy and oh so yummy, considering they're paleo, vegan, and gluten free!! If you like them, feel free to message me or DM me!!
