Chia Seed Pudding & More

You guys!!

I have found my new obsession when it comes to an easy to make snack {or breakfast // dessert}... CHIA SEED PUDDING!!

I'm sure the majority of y'all have already tried it or heard of it, and I am probably late to the game on this one BUT I have finally nailed down a recipe. I'll be honest, the first time I attempted making this, it was a COMPLETE failure. It was absolutely disgusting and was just all chia seed chunky {if you follow me on Snap, you definitely witnessed how nasty it looked}.

Anyways -- Chia seed pudding has TONS of health benefits and it is SOOOO filling!! It it super simple to make and I now eat it on my way to work for breakfast {when I snooze my alarm too many times}, when I get home before I workout as a snack, or as dessert if my dinner didn't fill me up enough

Health benefits of chia seeds:

☆ Omega-3s: helps prevent heart disease // lower blood pressure {2 tablespoons has as much Omega-3 as 4 ounces of salmon!!}

☆ Good source of fiber: provides movement throughout the digestive system {aka it basically helps you poop} // helps prevent chronic disease

☆ High in calcium

☆ Full of antioxidants: helps maintain glowing skin!!

Now I have made my chia seed pudding a couple of ways, but if you just would like a simple, three ingredient recipe, I will list those first.

Chia Seed Pudding Recipe:

☆ 1 cup of milk {I use almond milk cause I can't have dairy}

☆ 3 tablespoons chia seeds

☆ 2 teaspoons honey {the more you use, the sweeter it gets}

Additives:

☆ 1 tablespoon whole flaxseeds {again help with digestion // cholesterol // add fiber and omega-3 to your dietary intake}

☆ 2 teaspoons vanilla {makes it taste more like dessert}

☆ Sprinkle of cinnamon

☆ Fresh berries {I love chopping up strawberries // raspberries // blueberries} for extra flavor

If you have any gluten free // dairy free recipes that you recommend, PLEASEEEE send them my way!! I LOVE cooking // baking and I am ALWAYS looking for something new to eat {I'm literally always eating, so that's basically why}.

Now -- Be sure to check back in on Friday for the apartment tour // photos of my new place!! And if you wanna, follow me on Snap and Insta-g... I have a fun photoshoot tonight in downtown Dallas {props: arcade // illuminated lights //etc.}. Fingers crossed I'm not a freakin awkward turtle lol.

OHHHH also, I figured I would fill you guys in on my dating disaster of the week because I shared it with my Snapchat watchers and was getting a TON of hilarious feedback from them.

So there's this one guy that I have previously talked about... You know, the one who ended out first date by saying some crude things. Yeah, that was WEEKS ago BUTTTT he still continues to reach out to me and get me to go on dates with him. I have either ignored or told him I am busy {which isn't a lie... binge watching Parks and Recreation counts as busy}.

Anyways, on Saturday night he tried getting me to go out to dinner and drinks with him and that didn't happen and then on Sunday he wanted to just get drinks with me. That also didn't happen.

Wanna know what did happen on Sunday night though?!

I got sent a photo of a girl naked in his bed!! Like are you FREAKIN KIDDING ME?!?! Here's a tip to any and all guys who manage to come across my blog and this post: IF YOU WANNA TAKE A GIRL ON A DATE DON'T SEND HER A PICTURE OF ANOTHER GIRL YOUR WITH... LET ALONE A NAKED ONE THAT YOU'RE IN BED WITH!!

Okay -- Now that is officially all I have to share with y'all today... Honestly, this post went from me just wanting to share a recipe with you to a full rant, so I apologize.

xoxo V
